Broiled Flounder with Sweet Pesto Sauce

Servings: 4


Ingredients:
For Fish:
4 flounder fillets or tilapia fillets, approx. 6-8 ounces each
1 tablespoon olive oil
Salt and pepper

For Pesto Sauce:
1 cup B. Lloyd's Roasted Pecan and Almond Pieces
1 1/2 cups fresh basil, stems removed
2 garlic cloves, cut in half
1/2 cup olive oil
1/3 cup fresh Parmesan, finely
Additional Parmesan for garnish

Steps:
Line a baking tray with foil and spray with a non-stick cooking spray. Place fillets on baking spray. Brush with olive oil. Sprinkle with salt and pepper. Place in the oven and broil for 5-7 minutes, depending on the thickness of the fish.

While fish is broiling, place B. Lloyd's Roasted Pecan and Almond Pieces, basil, and garlic in the bowl of a food processor and pulse until fine. Add olive oil and pulse until well combined. Pour into a small mixing bowl and stir in Parmesan cheese.

Just before fish is finished broiling spread 1/2 tablespoon of pesto on each fillet and return to broiler for 15 seconds.

Garnish with additional freshly grated Parmesan.

Any unused pesto sauce can be stored in the refrigerator for future use on chicken, pasta, or your favorite pizza.
